Walk into any health cafe, and the “healthiest” item on the menu is always a raw salad. The logic seems sound: Raw vegetables have live enzymes and intact vitamins, so they must be better than cooked ones.

The Fact: In Ayurveda, raw food is not inherently “good.” It is heavy (Guru) and cold (Sheeta).

How to Eat Raw (The Right Way)

The rules for Ayurveda and raw food are simple: it doesn’t ban it, but it requires care.

  • Lunch Only: Eat raw foods at noon when your digestion is strongest (matches the sun). Never eat salad for dinner.

  • Add Oil: Always use an oily dressing (olive oil, sesame oil). The oil counteracts the dry, rough quality of the vegetables.

  • Add Spice: Black pepper, cumin, or ginger will help “cook” the food in your stomach.

  • Stick to “Sun-Cooked” Fruits: Ripe fruits are “cooked” by the sun and are easier to digest than raw vegetables.
